I just found your blog and also have strong yearnings for Scandinavian baked goods! In Copenhagen a konditori had these luscious poppy seed danish that were so fantastic that I still think of them all the time even though I haven't been there for 15 years. I will hunt here in the Northwest and report what I find. There are oodles of yummy bakeries up here.
